Some people marinate it first in a mixture of onions, ground ginger and garlic, with lemon juice and hot pepper.

However, most Kenyan hotels and homes also offer a delicious meal. You prepare it with potatoes, corn and pumpkin leaves which are later mashed.

It’s served with meat gravy or vegetable salad comprising thinly cut onions, tomatoes, pepper and coriander.
