West African chicken dishes are incredibly versatile and tasty thanks to the variety of spices and ingredients used in West African cuisine. West African recipes typically include a combination of chili peppers, garlic, onions, tomatoes, ginger, peanut butter or oil, and sometimes coconut milk. A wide range of flavors can be created with these ingredients. Here are 7 famous West African chicken dishes and recipes.

1. West African Chicken Stew

Ingredients

  • A whole chicken, cut into eight pieces
  • One large brown onion, chopped
  • Two garlic cloves crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 1 tsp ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 3/4 cup crunchy peanut butter
  • 1 cup Massel salt reduced chicken style liquid stock
  • 400g can diced tomatoes
  • 1 tbsp lemon juice
  • peanuts

Step 1

To begin, one of West African chicken dishes, warm up some oil in a saucepan set over medium heat. Brown the chicken pieces for two minutes, keep turning it until both sides turn golden. Move it to a big plate and repeat with any remaining batches of chicken.

Step 2

Begin by adding hopped onions to the pan, keep stirring and cook for five minutes or until softened. Now add garlic, ginger, cumin, ground coriander and cayenne pepper for 30 seconds to bring out its fragrant aroma. Follow this up with peanut butter and stock, which should be blended until a smooth consistency is achieved. Finally stir in tomatoes and half a cup of water until all ingredients are thoroughly combined.

Step 3

Return the chicken to your pan. Once the chicken is back in your pan, turn up the heat and bring it to a rapid boil. After that, reduce to low and cover. Let it simmer for around 30 minutes or until almost cooked through. cook longer if need be so the sauce thickens slightly and the chicken is fully cooked. Finish off by adding lemon juice plus salt & pepper for taste.

Step 4

Meanwhile, to prepare cauliflower rice: put the vegetables in a food processor and process until it’s finely chopped. Next, heat oil in a large frying pan over medium heat. Add your cauliflower to the pan and cook for 20 minutes, occasionally stirring until it’s lightly golden and tender. Now stir in green onion before seasoning with salt – voila! You’ve got some delicious cauliflower rice to enjoy as part of any meal.

Step 5

Serve chicken stew with cauliflower rice and sprinkle with nuts and coriander leaves.

2. West African Chicken Coconut Curry

 

Ingredients

  • Four chicken thighs, cut into chunks
  • One onion,
  • thinly sliced2 cloves garlic,
  • minced1cm piece fresh ginger, peeled and grated2
  • tablespoons African curry powder
  • 400ml can coconut milk
  • 2 tablespoons tomato puree salt and pepper to taste

Step 1

To begin this West African Coconut Curry recipe, heat some oil in a large saucepan over medium-high heat. Add the chicken and cook for around five minutes or until it begins to brown.

Step 2

Next, add onion and fry for 3-4 minutes before adding garlic, ginger and West African Curry Powder. Stir for another 30 seconds before pouring in coconut milk and tomato puree. Once all ingredients are combined, reduce heat to low and simmer for 25-30 minutes or until chicken is cooked through.

Step 3

Finally, season West African Coconut Chicken Curry with salt and pepper before serving it with boiled rice or mashed potatoes.

3.West African Chicken Peanut Stew

Ingredients

  • Two tablespoons of olive oil
  • One onion, chopped
  • Two cloves garlic, minced
  • 2cm piece fresh ginger, peeled and grated
  • 500g chicken thigh fillets, cut into chunks
  • One teaspoon of African curry powder
  • 400ml can reduced-salt tomato soup or 1/4 cup tomato paste
  • 3/4 cup crunchy peanut butter
  • 1 cup Massel salt
  • 400ml can of diced tomatoes
  • One tablespoon of lemon juice
  • peanut butter

Step 1

Heat oil in a large saucepan over medium heat to start making West African Peanut Stew. Add onion and cook for 5 minutes or until softened. Now add garlic, ginger and African Curry Powder and cook for 30 seconds or until fragrant.

Step 2

Next, add chicken to the pan and cook for 5 minutes or until lightly browned. Pour in tomato soup/paste and stir in peanut butter and stock before bringing it to a boil.

Step 3

Once boiling, reduce to low and simmer for 25-30 minutes or until chicken is cooked through. Finally, stir in tomatoes and lemon juice then season with salt & pepper if desired before serving West African Peanut Stew over rice/couscous and sprinkling with chopped peanuts.

4. Jollof Rice with Chicken

Ingredients

  • Two tablespoons of vegetable oil
  • One onion, chopped
  • Two cloves garlic, minced
  • 2cm piece fresh ginger, peeled and grated
  • Four chicken thighs cut into chunks.
  • One teaspoon of West African curry powder
  • 1/4 cup tomato paste
  • 3 cups Massel salt
  • 2 cups long-grain rice
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Step 1

To start making this West African dish, heat some oil in a large saucepan over medium-high heat. Add the chicken and cook for 5 minutes or until lightly browned. Add onion and fry for 3-4 minutes before adding garlic and ginger.

Step 2

Next, stir in West African Curry Powder before pouring in tomato paste and chicken stock. Bring to a boil, then reduce heat to low, cover with a lid and cook for 20 minutes or until the rice is tender. Now add frozen peas before seasoning with salt and pepper.

Step 3

Prepare Jollof Rice and put it aside. Finally, serve the Rice with chicken alongside some steamed vegetables or a salad.

5. Yassa Senegalese dish

Ingredients

  • Four chicken thighs, cut into chunks.
  • Two tablespoons of West African Curry Powder
  • 1/4 cup plain yoghurt
  • 1/4 cup lemon juice
  • Three cloves garlic, minced
  • Salt and pepper to taste

Step 1

To begin making one of West African chicken dishes-Yassa, a Senegalese dish, heat some oil in a large saucepan over medium-high heat. Add chicken and cook for 5 minutes or until lightly browned. Now remove from pan and set aside.

Step 2

Next, reduce heat to low and add Curry Powder, yoghurt, lemon juice and garlic. Stir for 1 minute before returning the chicken to the pan and coating it with the Yassa sauce.

Step 3

Finally, season West African Yassa Senegalese chicken with salt & pepper before simmering on low heat for 15-20 minutes or until cooked through. Serve over boiled rice or couscous, and enjoy!

7. West African Grilled Chicken

Ingredients

  • Two tablespoons of West African Curry Powder
  • Two teaspoons of garlic powder
  • One teaspoon of cayenne pepper
  • Salt and pepper to taste
  • Four chicken thighs, skinless & boneless

Step 1

To make West African grilled chicken, mix West African Curry Powder, garlic powder, cayenne pepper and some salt & pepper in a small bowl. Rub this mixture over the chicken thighs and set aside.

Step 2

Now heat your grill to medium-high heat and lightly oil the grates before adding chicken. Cook for 6-7 minutes on each side or until cooked through before serving West African grilled chicken with some steamed vegetables or a salad. Enjoy one of West African chicken dishes.
